You know that you’re living in a cosmopolitan town, when on a Wednesday evening, you can walk into the stunning Hilton West Palm and join 40+ local foodies and wine lovers on Chef Miguel Santiago’s “Tour of the Mediterranean”.
The dinner started with a reception by the pool, wine was served with delicious pass-around hors d’oeuvres. The weather was perfect, but the threat of rain moved the event from the poolside lawn inside.
The wine dinner featured a chef-driven, four-course pairing menu which included lobster thermidor, Catalonian beef-stuffed potatoes, and sinful espresso panna cotta topped with kataifi, marcona almonds, and shaved chocolate.
It was fantastic.
Each course is accompanied by fine wines from Private Cask Imports, like Arnaud Baillot, Cave de Hunawhir, Château Labastide Orliac, and Château Fargueirol.
The dinner started with the Wild Mushroom Bisque which was buttery smooth with white winter truffle essence and delicious steamed Maitake. Cauliflower is trendy again, and the second course brought us a blend of cauliflower textures. Crispy, mousseline, pickled and crumbs. The combination was fascinating, it was paired with a Gewürztraminer “Cave de Hunawihr” a fruit-forward wine which was a bold choice for a second wine, but worked well.
The final course was the lobster thermidor and beef filet which was paired with Labastide Orliac “Le prince” Bordeaux Blend.
Chef Miguel Santiago and his team did a fantastic job on this, stay tuned for upcoming events. The plan is to have one wine dinner a month. Don’t miss the next one.

Comic Con revolution is an annual comic con held at the Palm Beach County Convention Center. The first annual event is scheduled for February 24th, 2018.
The hours of the event are 10:00am (9:00a w/ advance ticket purchase) to 7:00pm on Saturday February 24th.
Attendees can expect a full exhibit hall with over 150 exhibitors including comic creators (over 80 creators in Artist Alley), new comic dealers, vintage comic dealers, comic publishers, toy & collectibles vendors, crafts, costumes, clothing, cosplayers, fan groups and more.
